Helen Corbitt?s Cookbook, first published in 1957 by Houghton Mifflin (with the Riverside Press), is a mid-century classic that gathers recipes developed over the author?s career, including her work directing food services at Neiman Marcus in Dallas. The 388-page volume offers practical, elegant American cooking oriented toward entertaining, with miscellaneous tips including measurements and an emergency shelf. It emphasizes fresh, high-quality ingredients, attractive presentation, and approachable sophistication, reflecting Corbitt?s reputation for elevating Texas dining beyond traditional fare. From 1955 she directed Neiman Marcus food services, notably the Zodiac Room, for about 14 years. The first woman to win the Golden Plate Award (highest food-business honor) and received 1969 Texas Restaurant Association Outstanding Service Award, she pioneered fresh, inventive cuisine (Texas Caviar, poppyseed dressing) and authored numerous cookbooks; a 1975 Chicago Tribune profile called her *the Balenciaga of food* and Texas Monthly named her 1999 *Tastemaker of the Century,* and a 2009 Los Angeles Times piece described the *Julia Child-like cooking celebrity with a Texas twang.*.…
