(From the Foreword) "This special collection of recipes is a celebration of America's great culinary heritage. Many are classic recipes, direct from the pages of Good Housekeeping Magazine; others have been newly developed for this book. All of them, whether traditional or contemporary, have been brought up to date. We've included calorie counts for each one, and made certain that they use the best ingredients, and fewest special utensils. We are also photographed them in attractive settings to provide inspiration for serving. Each finished dish is shown in the Color Index at the beginning of the book, accompanied by a caption giving its main ingredients, the time needed to prepare it, and the number of servings. In this way, you can browse through the pages selecting the most appropriate dishes for your meals since you'll know at a glance what you need to make them, as well as the time they will take to cook. Once you've decided, you will find the recipes set out in an easy to follow step-by-step format; many of the recipes are accompanied by a complete set of diagrams. Therefore, even beginning cooks will be able to use the recipes successfully. Of course, it helps to bear the following things in mind: When you prepare a recipe for the first time, read it through carefully to make sure that you have allowed enough preparation time. Before beginning to cook, assemble the utensils needed and measure all the ingredients. Avoid substituting key ingredients, product forms (such as regular or instant) or package sizes, unless the recipe suggests an alternative. Be cautious, too, about doubling or halving any recipe; although some can be increased successfully, many more cannot. For best results, make up the recipe as given and, if a larger quantity is desired, repeat the recipe a second time. Seasonings and spices can be varied safely according to personal taste, but it is always a good idea to follow the recipe directions exactly for the first time. By following these few tips, and the wealth of diagrams and photographs throughout, we hope that this book will provide all the necessary practical information, plus the inspiration, for you to serve a multitude of memorable meals - not only on special occasions, but every day.".
