It traces the development of head waiters in the dining rooms of American hotels from the mid-1800s to the early 1900s. It examines the roles played by African American men within this profession and how, often trained in the skills of good service through their work, they became instrumental in raising standards within the industry. The book also discusses the establishment of the Head, Second and Side Waiters National Benefit Association in 1899, an organization founded to train the men in their profession and promote their advancement in the industry. Through the stories of several prominent head waiters and their contributions to the profession, the book highlights how African American waiters were often the backbone of the dining room service in the leading hotels of the time. This book is a reproduction of an important historical work, digitally reconstructed using state-of-the-art technology to preserve the original format. In rare cases, an imperfection in the original, such as a blemish or missing page, may be replicated in the book.…
