Different fungi were isolated from soil, water, and air and tested for their ability to produce single cell protein on various food waste media (pineapple, orange, banana, sugarcane bagasse, and garlic). The optimization of fermentation conditions of the promising fungi was conducted and then the proximate analysis, amino acid, fatty acids, mineral analysis, total phenols and flavonoids, antioxidant activities, and cytotoxicity of the SCP of the promising fungi were studied to determine its ability to be used as human food and animal feed. Finally, the protein profile was determined by Sodium dodecyl sulfate polyacrylamide gel electrophoresis (SDS-PAGE).
