A New and Easy Method of Cookery was written and published in 1755 to serve as a textbook for Cleland’s students at the Edinburgh School of Culinary Arts. This Scottish cookbook includes such interesting recipes as Pasties, Crokain, Fairy Butter, and Whetstone Cakes, and frequently uses the old Scottish term “Mutchkin” -- a liquid measure that is equivalent to a little less than a U.S. pint. Also includes a section on brewing, distilling, and wine making.
