About the Author

Professor Keith Waldron is a Senior Scientist at the internationally renowned Institute of Food Research, UK where he is head of the "Sustainability of the Food Chain Exploitation Platform". He has published widely in the field of plant cell walls and was awarded the coveted Open University Ray Nelson Prize in 2001.
