After both retiring from their first careers, Dr. Lisa Cowley, a holistic chiropractor and nutritional counselor of 25 years, along with her husband, Victor Westgate, a high school educator of 34 years, moved from Long Island to upstate New York, and asked "what's now/what next?" and the answer sprung forth in a second career as small niche farmers raising log-grown shiitake mushrooms.
