It was 2010 when I first travelled to Finland to complete my Master's degree in nutrition science and see first-hand why obesity and rates of type 2 diabetes were relatively low in Scandinavian countries. What I didn't expect was the Finns' heavy consumption of a food that was not quite cheese and not quite yoghurt... yet just as satisfying as both. This dairy food is called rahka, or Quark as we call it in English. These days I work as a dietitian in Sweden, Finland's neighbour.
