Crosby's improved egyptian - The earliest beet in the market, a selection from the old market beet, Early Egyptian, retains the earliness of the parent Stock, and has added thickness, giving it a more desirable shape; it is the deepest red, almost black in color and of finer quality than the Egyptian, being sweeter and even more tender and 'smooth.
