W'ith but a small outlay one may keep a supply of what is essential for the making of a good soup. Winter vegetables such as turnips, carrots, onions, and celery (the outer stalks of celery - often not suitable for serving) may be used for soups. When celery is expensive, celery salt may be substituted with fairly satisfactory results. Sweet herbs such as thyme, savory, and marjoram, bay leaves, Spices, including cloves, allspice, whole pepper, and stick cinnamon should always be kept on hand. These seasonings, with the addition of salt, pepper and parsley, are the essential flavorings for all soups. Flour, corn-starch, arrowroot, tapioca, sago, pearl barley, rice, bread, or eggs are added to give consistency and nourishment.
