If you follow the directions, you will make great candy.
My mother, who is 90 years old, and I wrote this book in 1987. We are still making candy and using the recipes we put on these pages. You have to follow directions carefully and adjust for the changes in altitude. We take the mystery out of chocolate handling. With a little practice, you can make professional looking candy. Anyway they look, they will always taste great. We wish you luck and happy candymaking.
