This book celebrates generations of people who have had the courage to go their own way, to cling to proven, sometimes even ancient, techniques, to remain loyal to age-old flavors despite the existence of easier, less laborious methods.

Fred W. Sauceman is a native of Greeneville, Tennessee, and teaches courses in the foodways of Appalachia at East Tennessee State University. He is food columnist for the Kingsport Times-News and contributes features on Southern foodways to Blue Ridge Country magazine. A member of the Southern Foodways Alliance, he is a regular commentator on food-related subjects for ""Inside Appalachia,"" produced by West Virginia Public Broadcasting, and is editor of Now & Then: The Appalachian Magazine, published by ETSU.
