Synopsis

This book illustrates the versatility of the natural claypot cooker. True to traditions of ancient gourmets, yet essentially practical for today's cooks, clay cooking pots may be used in conventional and forced-convection ovens as well as in microwave cookers to give sure success with minimum fuss. The cooking method is particularly well suited to the contemporary diet as it does not require the addition of fat; in fact, a wide range of foods benefit from cooking in their own juices, allowing for full-flavoured meals that bring out the best in fresh foods. The book opens with an introduction that clearly explains the principle and basic techniques of claypot cookery. This opening section also includes information on cooking different types of foods and dishes, on the use of different ovens and on maximizing the microwave cooker by teaming it up with a clay cooking pot. At least 100 recipes, all illustrated by step-by-step colour photographs, are grouped as follows: soups, fish and seafood, poultry, meat, vegetables, rice, grains and pulses, desserts, breads and cakes and microwave recipes.
