About the Author

Gary Rhodes is one of Britain’s best-loved chefs. His success includes four Michelin stars - at the Castle Hotel in Taunton, Somerset, The Greenhouse, city rhodes and, most recently, Rhodes in the Square - and the prestigious CATEY Special Award, the catering industry’s equivalent to the Oscars, for helping to revive British cookery and for his total dedication to the industry. He has presented six television series, including a cookery series for children based on Roald Dahl’s Revolting Recipes, and has written six other cookery books. As well as his two highly acclaimed London restaurants, Gary has recently opened two brasseries, Rhodes & Co, in Manchester and Edinburgh.

Following the success of my first three Rhodes Around Britain books, it was almost inevitable that this volume would happen: the range and sheer number of recipes offer the home-cook an easy solution when it come to choosing good, traditional and inspired food. The recipes have been grouped not only into chapters for each course but also into sections within them to provide you with a selection of recipes for a main ingredient in one go. So, for instance if you look up the Meat Main Courses chapter, you’ll find the recipes for lamb together, or pork, or offal, which makes it easier to select the appropriate one for the occasion.

While this book gives you over 450 recipes to choose from, it has the potential to offer you more than that. I want to break the pattern of strict rules and regulation when it comes to cooking, and I hope you will read this book differently form other cookery books. After all, every recipe has room for movement and improvement. You can follow the recipes, you can change them, use them as guidelines, or follow the alternatives – the point is it’s up to you.
