It is not necessary for her to know how to prepare complicated dishes and costly compounds; but it is necessary for her to know what food principles the crude materials contain, and how and in what propor tion they should be grouped in a meal; and also in what articles the material needed is to be had at the least cost. But, above all, it is important for her to know how this food should be cooked so as to develop and preserve its nutritive qualities, and to render it most appetizing and digestible.
