George is a New Zealand based spirits writer and judge with many years of experience working in the hospitality industry. A passionate gin advocate whose love for spirits sprung from his father's love for a good gin and tonic. He has extensive knowledge of the New Zealand and Australian Gin industries, comprehensively tasting just under 1000 Australasian gins over the past two years. Deeply intrigued by the variety of styles and distillation techniques being used in the modern world of gin, he is a strong supporter of the ever growing boutique and artisanal spirits scene. He also obtained the WSET Level 2 Award in Spirits qualification in 2021.
Jess was brought up in the kitchens of some of Adelaide's old-world fine dining restaurants before moving to bar work via festivals and cocktail bars. Fuelled by a love of gin and tonic, she eventually landed at Melbourne's institution of juniper, Gin Palace. During her long tenure there, stirring martinis and creating contemporary cocktails, she was given the unofficial title of 'The Lady of Botanicals'. Her knowledge of all things gin has been built with a focus on the scientific reasons certain botanicals have made their way into gin. Diving into the history and compositional analysis of Australia's most prolific indigenous botanicals, she continues to push her understanding of Australian flavours and champion their qualities.
