Mais titre oblige, et celui de ce livre portant Fermenta tions rationnelles je ne pouvais m'en tenir à la vinification, c'eût été rester en chemin. C'est pour cette raison que j'ai été conduit à traiter du cidre et du poiré, des meilleures méthodes de leur préparation et de leur conservation, ce qui m'a amené à parler des maladies de ces boissons et des moyens de les guérir.
