The Viandier is the most important early recipe collection of medieval France. Written in the 14th-century by Guillaume Tirel (alias Taillevent) the chief cook of King Charles V of France, it is the starting point of many culinary traditions and practices that remain at the base of modern French haute cuisine. This volume is the first to present all four existing manuscripts of the Viandier, arranged in parallel. Of particular interest are the differences between the four manuscripts, which represent more than a century of modifications. The 220 recipes are in the original French with a complete English translation, includes commentary and notes, glossary and bibliography. In addition, selected recipes have been adapted (with minimal modifications) for modern use and arranged into a menu for six servings.
