Nel complesso buon esemplare da studio. Prima edizione di questo grande classico della letteratura culinaria ottocentesca essente in pratica una versione di magro del Cuisinier moderne. Dell' editio maior questa infatti è una versione ristretta nelle ricette (3.300 in luogo di 5000) e nell'apparato iconografico (262 in luogo di 330 incisioni) unita a una sorta di semplificazione delle ricette sposante l'idea che l'essenzialità teorica sia vincente. Oltre alle preparazioni dolciarie di ogni sorta, ricette di antipasti, zuppe, salse, selvaggina, pesce, etc. Le pp. V-XVI contengono le riproduzioni di numerosi menus, alcuni dei quali offerti a esponenti di spicco dell'aristocrazia europea o ad alti funzionari della diplomazia (l'Ambasciata di Russia a Parigi). Gustave Garlin fu chef a Tonnerre, nell'Yonne; la sua formazione culinaria, dopo un primo avviamento datogli dal padre, ebbe luogo nelle ambasciate e in alcuni grandi ristoranti parigini.

Edition originale de ce traité des plus classiques, très bien disposé, et d'une qualité pédagogique indéniable, formant une véritable encyclopédie culinaire au moment où la gastronomie atteignit un sommet qu'elle ne put que redescendre par la suite.Originaire de Tonnerre, et né semble t-il en 1838, Garlin est peu connu, sauf par ce qu'il dit de lui-même : "Je me suis formé moi-même dans les ambassades, au Sénat, dans les ministères et dans quelques-unes des bonnes maisons du faubourg Saint-Germain".
