Chloe Doutre-Roussel was the chocolate buyer at Fortnum and Mason in London. An agronomist by trade, she now works as a freelance chocolate consultant and also runs chocolate tasting courses. She has worked in chocolate factories, and as a taster and adviser for chocolatiers.
