Peter Gilmore has been the executive chef of Quay restaurant since August 2001 and in that time has elevated the restaurant to 29th on The World s 50 Best Restaurants list. In 2012 Peter was awarded Chef of the Year in The Sydney Morning Herald Good Food Guide and his creative and original food has brought international accolades for Quay.
