Condition: Bon. in-4 rel. 1/2 perc. dorée (17,5 x 27,5), VII-504 p., réimpression en fac-similé de l'édition de 1873, 137 gravures sur bois et 10 planches chromolithographiques, marques de frottement au dos, intérieur frais, bon état. Après "Le Livre de Cuisine", "Le Livre de Pâtisserie" est le livre de référence de Jules Gouffé, une bible culinaire qui fait encore l'admiration des chefs d'aujourd'hui. Tout sur les bases indispensables de la pâtisserie jusqu'à la réalisation de pièces montées, art pour lequel Gouffé était si réputé. Remarquable par le nombre des recettes, leur détail, leur précision sans laquelle il n'y a pas de bonne pâtisserie car, comme le disait Jules Gouffé : "Un bon pâtissier devient aisément habile cuisinier, tandis qu'on n'a jamais vu de cuisinier devenir grand pâtissier. En somme, toute la science de celui-ci consiste dans l'observation de la pendule : c'est une question d'horlogerie plutôt qu'un don de la nature " Celui que l'on a surnommé "le maître de la pâtisserie ornementale" a influencé la pratique culinaire jusqu'aux chefs du XXe siècle dont Bernard Loiseau, qui lui dédia un livre et aux adeptes de la gastronomie moléculaire qui réfèrent régulièrement à lui.
