About this Item
Softcover with textured paper covers, red paper spine over staples, front cover with black lettering & ruled borders, 7-3/8" x 5-1/2", 82 pp., scattered advertisements. Wraps worn, moderate soiling. Good condition. Although the second edition, this is still an early cookbook for Oregon. Of particular interest is the "Cakes and Cookies" section. It has a recipe for Ice Cream Cake, an early appearance. Most ice cream cakes of this era (one of the earliest being in The Settlement Cookbook, 1901) call for layering ice cream with cake; this one appears to be a solid mass of milk, butter, eggs, sugar and flour. The Geranium Cake is another early appearance. Although flowers have been used in baking for centuries, the geranium rose leaves in this recipe are used to add flavor to the cake during baking, but discarded before serving. Finally, Watermelon Cake, with a white outside and red inside (with raisins), is a very early, if not first, appearance. It appears in only scattered references in the early 20th century, and in fact is the title of a modern cookbook celebrating vintage recipes: Walnut Pickles and Watermelon Cake: A Century of Michigan Cooking (Massey & Massey, 1990.).
