Kim was born on the 22nd January 1968 in Aldershot, Hampshire. Her family moved to Boston, Lincolnshire shortly after and has worked in Boston all her life. Kim studied as a weight management consultant at Stonebridge Health College. She is also a qualified beauty therapist and sports massage therapist. Kim owns and runs her own beauty salon in Boston. While Kim was studying for her diploma she decided to research the glycaemic index. She said, "It made so much sense to me". Kim adopted a low GI diet herself, making small changes and now it has become a way of life. Once upon a time she did weigh over 13 stone (182lbs; 83kg)!
