About the Author:

David Hickie qualified from Trinity College, Dublin in environmental sciences in 1985 and has a special interest in trees and forestry. He worked as a professional environmentalist for ten years before becoming a planning and environmental consultant. He is also a writer on Irish and European environmental issues. He lives in Dublin. The Photographer Mike O'Toole's work has appeared in many publications including Australian Vogue, Good Housekeeping, House & Garden and Food Illustrated, as well as a number of cookery books. He was the first Irish photographer to win the silver prize at the Association of Photographers Awards, the 'Oscars' of the photographic industry.
