La chaleur animale est produite par les métamorphoses et par l'oxydation des matières alimentaires, et spéciale, ment des trois groupes fondamentaux corps gras, hydrates de carbone et composés albuminoïdes. Pour en définir l'origine et le développement, il est donc nécessaire de connaitre la chaleur dégagée par chacune de ces méta morphoses en particulier, chaleur qui se déduit elle - même. Suivant les principes de la Thermochimie, de la connais sance des chaleurs de combustion et de formation des divers principes contenus dans les éléments et dans l'économie humaine C'est dire assez quelle importance présente la détermination de ces chaleurs de combustion.
