Privilege is a very special kind of cookery book. It is written by two West Indians from different islands with different ethnic origins, different fields of work and different backgrounds. The great interest they both shared was their love for, and skill in, cooking which also contributed to their friendship. Errol Barrow was a politician, a black Barbadian who in the course of a distinguished political career held the position of Prime Minister of Barbados from 1961 to 1976 and from 1986 and his death in 1987. Doctor Kendal Lee, of Chinese origin, was from Trinidad, a man of many cultured interests. Sadly he also died , only a few weeks after Errol Barrow. Fortunately Privilege had been completed shortly before their deaths and stands as a legacy from the two men of their wish to share with others their love of the rich diversity of good recipes from the Caribbean. Some of these they developed themselves and all were tested by them and often improved from their own experience. Their recipes cover the wide range of cultures which make up the Caribbean region- European, African, Chinese, Indian, Spanish and Mexican. As Errol Barrow says in his introduction: 'A simple everyday meal prepared in a Caribbean home can have many roots' 'Privilege' is a Barbadian dish frequently cooked in agricultural areas. It is unique, simple to prepare and a complete one-dish meal of high nutritional value. For these reasons, the authors decided to name the book after it.
