Immediately after the organization of the Board of Agriculture in 1877, one of the first things which engaged the attention Of the Secretary was the manufacture and sale Of imitation butter, (the manufacture Of imitation cheese had not then commenced,) and a plan was formulated for a thorough examination Of the whole matter, the full report of which will be found in the annual report Of the Board for 1877,pages 186 - 20l,in which the reader will find a full account Of the manufacture, and its cost and effect on the market for dairy butter. At that time the only product (imitation) known to the trade was oleomargarine made from tallow only; at that time the condition of its manufacture was such that it was easily detected by a casual examination, and the application Of heat would at all times Show its derivation.
