"Thepure Cook Book" by Gesine Lemcke (1841 - 1904), and published in paperback format by Thepure Baking Powder Company of Albany New York, is a forgotten Cook Book, not included in standard reference guides, Allen, Barile, or Daniels. We know it was published in 1904 because the book did get entered into World Catalog (OCLC), but the copy here presented seems to be the only specimen for sale online. *************************************** This particular copy is in rough condition, MISSING ITS REAR COVER, AND WITH A MEND TO THE FRONT. The front cover has been neatly reinforced around the edges, and looks quite clean and attractive. It is what would be called a sophisticated copy, since the reinforcement - or mend (as it certainly was) means it is not as it was when first published. It looks just dandy to me. ************************************* Gesine Lemcke, who was Principal of the Greater New York Cooking School, wrote a number of books on cookery. Some of these were aimed at institutional kitchens such as hotels and restaurants ran. Others were aimed at household cooking. There is a printed seal on the cover that says that The Pure Baking Powder was "Adopted by the Wholesale Grocers national Association as the best pure cream of tarter Baking Powder. The book presented here seems to cut across all the borders; there are testimonials from both professional cooks and housewives. There is a lot of solid information on the care and handling of foodstuff , and the recipes contain herein are of a great variety. I wager there are some forgotten recipes here. At the end of the book are four pages of additional recipes, two pages in German , and two pages in French. *************************************** TITLE : Thepure Cook Book - Containing Valuable and Reliable Recipes for All Branches of Cooking / AUTHOR : Gesine Lemcke (1841 - 1904) / IMPRINT : Thepure Baking Powder Co. / PLACE : 17 & 19 Green Street, Albany, New York / DATE : No date [ but 1904 as per World Catalog] / STATUS - RARE - OP / PHYSICAL DETAILS : Digest-sized paperback; [128] pages; approximately 5 1/2" x 7 1/2". pictorial wraps, stapled and glued. The front cover has a handsome border of a grapevine with bunches of grapes and leaves, printed in brown and yellow with an orange border (the front cover mend was done with orange paper which seems to have been the original border color . THE REAR COVER IS MISSING. ************************************ CONDITION - FAIR - Previously owned, SANS REAR COVER, and with a neatly effected mend to the front, this scarce book remains serviceable, with the following particulars noted :: EXTERIOR -- Clean, but with the above mentioned loss and mend. Text-block edges are weathered and stained. / BINDING -- Holding . There are two places at the hinge where the title page has separated around the staples, but aside from this the text-block seems to be fairly solid - and there are no detached or loose leaves through the text. Still and all I consider the whole to be fragile. / INTERIOR -- Scattered smudging, a few cookery stains, a few creased corner tips . some page discoloration .the book has seen serious kitchen use, but remains serviceable. ********************************* This is a scarce book, held now in library collections, but rarely seen on the market - and one may well have difficulty finding another copy. Look past the condition to the contents within. It is a special find.
