In 'Pancake: A Global History', Ken Albala rigorously defines his subject: a pancake is a flat cake made from starchy batter, cooked in a small amount of fat on a flat surface. A scone is not a pancake, for example, but a blini is. The author recounts the illustrious history of pancakes around the world, from Greek and Roman times, to the Middle Ages, to the present. Today, whether it be maple syrup-laden flapjacks in North America, injera in Ethiopia, the famous French crepe, Japanese okonomiyaki, or Russian blini, he shows how pancakes have been the food which has perennially sustained our species. He also reveals how pancakes take on multifarious meanings across civilizations: as comfort food, food for travellers, celebratory and breakfast food. Containing 50 illustrations, with around 25 in colour, 'Pancake' takes us on a light-hearted tour through historic and modern recipes, and at the same time explores the role of pancakes in culture.
