Esta novela breve recrea un suceso del que London fuera testigo: el fatal desenlace de un boxeador en el West Oakland Club. «Un bistec» («A Piece of Steak»), escrito entre abril y mayo de 1909, costó 500 US$ a The Saturday Evening Post y fue publicado en noviembre de ese mismo año. El relato narra la historia de Tom King, un veterano boxeador, cuya familia se encuentra azotada por el hambre.
