The author is a "practising cook" and this book is aimed at " medium cooks--for those who can competetently roast a joint, bake a cake, and keep the lumps out of the white sauce". The style is ever-so-slightly pedantic but the organization of the book into 18 sections based on cooking processes makes sense. There seems to be some excellent advice on sauces, on baking with yeast, and baking with soda, and a 30 page section on pastes (pastry). (1.7 JM HOQ 103/b5 Size: 8vo - over 7¾" - 9¾".
