Synopsis

This volume examines developments in gastrointestinal immunity and hypersensitivity. It addresses the continuing controversies surrounding the prevention of cow's milk allergy by using, prophylactically, hypoallergenic products, the proteins of which have been hydrolyzed so as to preserve palatability and acceptance by the infant. Coverage begins with a review of the ontogeny of the mucosal immune system, the physiology of uptake and transport by the intestine, and the interaction of the nervous system with gastrointestinal mast cells. The second section focuses on intestinal hypersensitivity and explores the physico-chemical characteristics of food allergens, clinical and pathophysiologic manifestations of food hypersensitivity disorders. Included in the third section are discussions of non-intestinal manifestations of food hypersensitivities and recent findings on the role of adverse food reactions in infantile colic. The normal development of oral tolerance and the means by which oral and systemic tolerance might be induced are addressed in the next section. The final section provides insights into the issues of allergy prevention and treatment.
