I loved this adventure in the art of Cuban Cuisine!
I spent four years cooking and researching Cuban Cuisine for this comprehensive cookbook on the subject. While living in Miami, my friend Barbara Kafka suggested I write the "definitive" book on Cuban Cuisine. It was a labor of love, including my visit to Cuba to see what was happening there. I was surprised to note that the cuisine was further evolving and that the Cuban cooks, both in the homes and restaurants, were constantly inventing new recipes and solutions to cooking old recipes with a limited supply of ingredients.

I am still enthralled with the unique deliciousness of the Cuban cuisine. Most interesting are their superb techniques in cooking meats, poultry and tubers. Traditional methods, as well as those Nuevo Cubano are easy, but delectable ways to prepare the foods of the 90's.

About the Author:

Joyce LaFray, one of Florida and the Caribbean's foremost food experts, is the author of Tropic Cooking: The New Cuisine of Florida and the Caribbean and a dozen other popular cookbooks and guides. As "The Tropical Gourmet," she has been the host of Tropic Cooking, a food and wine television show, and is the food and wine editor of Creative Loafing, a popular newspaper in Tampa, Florida. She lives in St. Petersburg, where she tends to her collection of tropical fruit trees and exotic herbs.
