Synopsis

Taking readers on a tour of the world's most unusual and exotic cuisines, this series shows the diversity of culinary influences and how these dishes can be easily and authentically created at home. "Tapa" means lid or cover, and the tradition found in bars throughout Spain of serving small snacks with drinks comes from the old custom of serving bite-size food on a plate placed, as a "lid", on top of one's drink. Tapas are easy to cook at home; the more substantial dishes can be used as entrees and appetizers, and the smaller portions served as hors d'oeuvres or snacks. This book presents over a hundred simple tapas recipes in a straightforward way, with a comprehensive glossary giving details of any special food products, their uses, and substitutes which can be readily found.

About the Author

Richard Tapper was born in New Zealand but has spent most of his life traveling the world, sampling the cuisines of sixty-two countries. He has lived and worked in Indonesia, India, Britain, Holland, France, and the United States, and spent six of the ten years he resided in Deya on the Spanish island of Mallorca owning and operating a tapas bar-restaurant. He currently lives in, Australia, where he works as a caterer and freelance writer.
