From the Author:

The book is an upper level text.
My motive for writing The Vitamins was to have an up-to-date yet affordable text the I could use in support of the graduate level course I teach on the subject at Cornell University. Of course, this means that the book would also be useful for physicians, dietitians, veterinarians and nutritions who need a good reference book on their office shelf. I was very pleased with the good reception that the book enjoyed in its first edition in 1992; this was a major factor in my deciding to update the work for the second edition which came out at the end of 1998. In making the revision, I was able to add or update several sections, particularly those dealing with the molecular biology and clinical aspects of the vitamins and their functional metabolites. In addition, the layout was improved and tables of vitamin values of foods and feed stuffs were added.

The Vitamins cannot be considered light reading, but most find it well written, very readable and clearly presented. My intent in writing this work has been to share with my students, as well as others whom I will never meet, enough about this fascinating aspect of nutrition such that they, too, can find the answers they need and be provoked to question current understanding.
